Mini vegetable sandwiches with labneh (168)

Ingredients for assembling
3 slices - Bread
Butter
Tomato marinade
4-5 leaves - Spinach
1 Tbsp - Labneh
Mushroom mix
Carrot marinade
Sauted broccoli
Mint leaves

Ingredients for the tomato marinade
2 pcs - Tomatoes (chop into very small pieces)
2 tsp - Peri-peri
1 tsp - Extra virign olive oil
Method
In a bowl add the tomatoes, peri-peri and oil.
Mix it very well with your hands and l
eave it to marinate for 20 minutes.

Ingredients for the labneh
2 cups - Yoghurt (Nestle slim curd or 2% Fat curd)
1/8 tsp - Salt or to taste
Method
Stir in the salt to the yoghurt and mix well.
Tie it in a muslin cloth and hang it for 20 to 24 hours.
It will achieve a distinctive tangy and sour taste.
Use as you required and store in the refrigerator.

Ingredients for the mushroom mix
16 pcs - Button mushrooms (wash, remove the skin and put in boiling water for 2 minutes) (remove, cool and chop into small pieces)
1 Tbsp - Extra virgin olive oil
1 clove - Garlic (chop finely)
1/2 pc - Green chilli (chop finely)
5 leaves - Basil (chop finely)
15 leaves - Baby spinach (finely chop)
1/2 tsp - Chaat masala
To taste - Salt
Method
Heat a pan, add the oil, garlic, cook till a aroma is released.
Then add the green chillies, basil, baby spinach, mushroom, chaat masala and salt.
Saute and cook for a minute.

Ingredients for the carrot marinade
2 cups - Carrot (grated)
1/2 tsp - Mustard sauce
1/2 tsp - Sumac powder
1/2 tsp - Honey
To taste - Salt
Method
Mix the carrot, mustard sauce, sumac powder, honey and the salt, together.
Keep it aside for 10 minutes to marinate.

Ingredients for the sauted broccoli
1 cup - Broccoli (chop finely)
2 tsp - Extra virgin olive oil
To taste - Salt
1 Tbsp - Grated cheese
Method
Heat a pan,add the oil,broccoli and saute.
Add the salt and cheese to it.

Preparing the bread slices
Cut the edges of all three slices of the bread.
Apply butter on both the sides of only two slices.
On the third slice, apply the butter on one side.

Assembly
Spread the tomato marinade on one slice that has buttered side of the bread.
Place the spinach leaves on it, cover it with the second bread slice.
Now liberally apply the labneh on this slice and spread the mushroom mix on it.
Cover with the third bread slice.
Garnish with carrot marinade, sauted broccoli and mint leaves.
Cut into small squares and serve it.

Note:For giving a clear, neat cut to my sanwiches, I have used the bread knife available on www.rena-metro.com
