Make your own Bruschetta (167)

To make approx 40 bruschettas

Ingredients
1 - French loaf (long) (cut it diagonally into slices of 1 cm each) (Toast it just before serving)
1 1/2 cup - Labneh (one recipe from uinspire) or Feta cheese
3/4 th cup - Thursday dip (from uinspire) or 125 gms of Goat cheese
4 Tbsp - Tahini paste {Mix it to 2 1/2 Tbsp yoghurt / curds and add a pinch of salt to taste}
30 - Mint leaves (cut)
1 pc - Mango (chop into small pieces)
1 pc - Avocado (chop into small pieces)
8 pcs - Tomatoes (chop into small pieces and mix 2 1/2 Tbsp of peri- peri to it and let it marinate for 20 minutes)
2 cups - Broccoli (chop into very small florets and saute with one Tbsp olive oil. Add salt and 2 Tbsp cheese to it)
30 pieces - Button mushrooms (wash, put in boiling water for two minutes, remove the skin, cool and chop it finely. Saute in 1 Tbsp olive oil add finely chopped 6 cloves garlic, 2 tsp ginger and 1 piece green chilli. Finaly add salt and chaat masala to it)
3 Tbsp - Sesame seeds(heat two tablespoon {Tbsp} of oil in a small vaghar spoon {copper bottomed spice roasting spoon with a long handle} and then add the sesame seeds to it and fry till medium brown. Remove from heat and put it in a bowl immediately)
2 Tbsp - Pickles (chop)
15 pcs - Black or green olives (cut them in halves)
15 pcs - Jalapeno (chop into halves)
2 Tbsp - Honey
3 Tbsp - Extra virgin olive oil
3 Tbsp - Pistachio and Almond flakes
3 Tbsp - Sprouted, boiled and salted mixed pulses

Assembly:
Place the cheeses and the toasted bread slices in seperate platters.
Now, place all the remaining ingredients in individual bowls.
Serve it on the table and help your guests to make the bruschetta of their choice.
