(makes approx 2 cups)

Ingredients
2 pcs - Avocado (ripe) {Vitamin - A, B, C, E, K, Protein}
1 Tbsp - Lemon juice
1 Tbsp - Coriander leaves (chopped)
2 pcs - Green chilies (deseeded and chopped)
2 cloves - Garlic (minced)
2 Tbsp - Onion (minced)
6-8 pcs - Jalapeno (bottled jalapeno available in the grocery stores) (chop into halves)
To taste - Salt

Method
Remove the pit and mash the avocado with fork.
Mix the avocado, lemon juice, coriander leaves, green chilies, garlic, onion, jalapeno and salt.
Keep on mixing with the fork.
Use it as required.

STORING:
It should be made just before eating otherwise it will discolour as it oxidizes and the taste will be affected.
It can be stored for a couple of days in the deep freezer as an acid (lime juice) is added to it.
But yet it looses its texture and colour.



EIGHT WAYS TO USE THE GUACAMOLE:
Fill it in the taco shells or the tortillas (to make a Burrito)
along with the
Mexican rice,Refried beans,Salsa,Hot SauceandSour cream.

Bruschetta
Spread it on a toasted bread followed by some chopped tomatoes and cilantro


As a Dip
Serve with corn chips or toasted pita

Salad
Add extra virgin olive oil or yoghurt or sour cream as per taste
Use as a dressing for corn, tomato and beans salad

Vegan Sandwich
Spread it on the breads instead of butter or mayo

Garnishing
Thin slightly with cream or milk and serve over soup or baking dish

Bravas
When teamed with mayo it goes very well with potatoes

Mexican Rice
As a topping on the rice along with corn chips
