Bread Mix
Ingredients

6 cloves - Garlic (Pounded)
To taste - Salt
1 cup - Bread crusts (Sprinkled with water)
1/2 cup - Olive oil
1 - lemonJuice
2 tsp - Vinegar

Method

Add the salt and the bread to the garlic. Slowly and alternately, add the oil, lemon and vinegar.
Beat well until the skordalia acquires a soft consistency.

Bechamel Sauce (Cheese sauce with Feta)
Ingredients
2 Tbsp - Butter
2 Tbsp - Flour
2 cups - Milk
To taste - Salt
To taste - Pepper
A pinch - Nutmeg (Jaiphal) (grated)
200 gms - Cream Cheese or Paneer
200 gms - Feta Cheese

Method
Melt the butter in a saucepan over medium heat.
After the butter melts, add the flour and stir continuously on medium flame (This is the roux).
When the flour turns light brown, gradually add the milk, stirring constantly so that no lumps are formed.
Bring to a boil and add the salt, pepper and nutmeg.
Cook further for a few minutes till it is smooth and slightly thickened.
Add the creame cheese and after a minute remove from heat.
Finally, add the feta and mix well.

The Filling
Ingredients
1 Tbsp - Olive Oil
1 - Onion (chopped)
3 pc - Garlic (pounded)
3 pc - Spring Onions with leaves (chopped)
1 small bunch - Spinach (finely chopped)
2 Tbsp - Fennel (chopped) or fennel seeds (1 tsp)
1/2 bunch - Dill leaves
Water
One recipe of the Bechamel sauce

Method
Heat oil in a pan and saute onion on medium flame for five minutes, then add garlic and spring onions with leaves and cook for one minute.
Add spinach, fennel, dill leaves, water and simmer.
Then reduce heat and cover the pan, stirring occasionally for few minutes.
Add the prepared Bechamel sauce and stir well.

Mashed Potatoes
Ingredients
5 - Potatoes (boiled and mashed)
To taste - Salt
To taste - Pepper
6-7 - Parsely leaves (chopped)

Method
Mix the pototoes, parsely, salt and pepper.

Add ons
Mustard Sauce - available at any grocery store.

Assembling
Preheat the oven at 200 degree C for 10 minutes.
Put a layer of the bread mix in a baking dish.
Next spread the filling on it.
Finally, top it with the mashed potato.
Reduce the temperature to 180 degree C and bake for 15 minutes.
Serve hot with mustard sauce.
