Kale stuffed mushroom caps [194]

Ingredients
2 cups - Kale (tear the leaves from the stem and wash them, discarding the stems)
4 cups - Water
1/2 tsp - Butter
4 cloves - Garlic (chop finely)
To taste - Salt
1/2 tsp - Oregano
1/2 tsp - Red chilli flakes
1 Tbsp - Cheese (grated)
1/2 tsp - Extra virgin olive oil
9 pcs - Button mushrooms (wash, remove the skin, put in boiling water for 2 minutes and scoop out the centre)
Dry roasted sesame seeds
Sumac powder
Microgreens Mix (spicy radish, cabbage cress & red amaranth microgreens, available in a single box)
(Wash and remove the dark seeds of the microgreens, as they are not edible)
Dry roasted sesame seeds

Step 1
Boil the water on high flame, let it boil for 3 to 5 minutes.
Turn off the heat and put the kale leaves in it, cover it.
After 4 minutes, pass it through a sieve.
When cooled chop it very finely.
Heat a shallow pan on low heat, add the butter, garlic and saute for a minute.
Put the kale leaves, give it quick stir and add the salt.
Saute for half a minute and then add the oregano, chilli flakes.
Again saute for 3 more minutes and finally put the cheese in it.
Remove in a platter and divide into 9 portions.
Keep it aside to use later.

Step 2
Heat a shallow pan, add the oil to it and spread the mushrooms on it.
Put the heat on high, spread the mushrooms with a small gap between each.
Saute for about 3 to 5 mins.

Step 3
Preheat the oven for 10 minutes at 180 degree C.
Fill each portion of the kale mix in each mushroom.
Bake the mushrooms for 7 to 8 minutes.
Top it with roasted sesame seeds before serving.

Assembly
Take a plain milky white dinner plate.
Sprinkle some sumac powder in the centre and on the periphery.
Sparingly sprinkle the roasted sesame seeds over it.
Rub the tip of your index finger around the periphery of the plate.
Thus cleaning the outermost edge and the inside edge of the plate.
Arrange the microgreens in an alternative pattern as shown in the picture.
Repeat the same pattern on the exact opposite side.
Serve your food in centre of the platter.
