VEG WHITE QUARTERS[77]

Stuffed and baked Pizza quarters with one of the mother sauce from the French Cuisine.

Ingredients for the Bechamel Sauce
3 Tbsp - Butter
3 Tbsp - Flour (Maida)

3 cups - Milk

1 small - Onion

To taste - Salt

2 tsp - Black pepper {Kali mirch} (ground)

5 tsp - Chilli flakes

5 tsp - Oregano


Ingredients for the Stuffing
3 - Pizza bread
1/2 cup - Capsicum (chopped finely)
1/2 cup - Baby corn (chopped finely)
1/2 cup - Yellow bell pepper (chopped finely)
1/2 cup - Red bell pepper (chopped finely)
1 Tbsp - Jalapeno (chopped)
1 cup - Mozzarella cheese {Britannia Cheeza}


Method for the Bechamel Sauce
Melt butter in a sauce pan over medium heat.
As soon as the butter melts, add the flour and stir continuously on medium flame.
When the flour turns light brown, gradually add the milk and the onion, stirring constantly so that no lumps are formed.
Bring to a boil, then add the salt, pepper, chilli flakes and oregano.
Cook further for a few minutes till it is smooth and slightly thickened.
Add the chilli flakes, oregano and remove from fire after a minute.
Discard the onion and use the sauce.

Method for the Stuffing
1) Prepare the white sauce according to the recipe given below.
2) Saute capsicum, baby corn, yellow and red bell pepper in a pan.
3) Add this mix and the jalapeno to the prepared white sauce.
4) Cut the pizza bread into quarters.
5) On each quarter give a deep cut from the centre to make into pockets.
6) Place the pockets on a oiled baking tray.
7) Bake in a preheated oven at 250 degree C for 5 minutes.
8) Remove from the oven and put the white veg mix inside the pocket.
9) Put the cheese on both the side openings of the pocket.
10) Place the quarters once again on the baking tray.
11) Reduce the temperature to 150 degree C and bake it for 10 minutes or till the cheese melts.
12) Serve with a mix of red chili sauce and tomato sauce.
