Seven layered peach pudding[156]

Ingredients
10 pcs - Oreo chocolate biscuits
6 pcs - Peaches (remove the skin and cut into pieces)
1/2 cup - Water
2 Tbsp - Sugar
1/2 tsp - Corn flour
200 gms - Coconut ice-cream
200 gms -Sweet cottage cheese or sweet paneer (recipe given below)
3 Tbsp - Dark chocolate (grated)
Method
Scrape out the cream of the biscuits and keep it aside.
Crush the biscuits and mix half of the cream in it.
Boil the water, turn off the heat, then add the peaches and sugar to it.
After 3 minutes, put the heat on and boil further for 2 minutes.
Cool, remove the syrup and divide it into two parts.
Blend one part for the peach sauce.
Now mix the corn flour in 1/2 tsp syrup that was kept aside.
Heat the blended sauce and add the corn flour mix to it.
Stir continuously, so that no lumps are formed.
Give two boils to it and then turn off heat.

Assemble
Round transparent bowl
Crushed oreo biscuit
Peach sauce
Coconut icecream
Sweet cottage cheese or sweet paneer
Diced and stewed peaches
Grated chocolate

First layer the oreo biscuits in the bowl.
Pour the peach sauce over it.
Then spread the ice-cream on it.
Layer the sweet cottage cheese on top of it.
Top with the stewed peaches.
Sprinkle the grated chocolate on top.
Keep it the freezer for 10 to 20 minutes.

Sweet Cottage Cheese or Sweet Paneer
Ingredients
1 litre - Cows milk
4 tsp - Lemon juice
2 1/2 Tbsp - Powdered sugar
1/4 tsp - Cardamom (pounded)
5-6 strands–Saffron
Method

In a heavy bottomed pan boil the milk, then reduce the heat and add the lemon juice.

Keep stirring till the milk curdles.

When separated well, remove from the heat and pass it through a muslin cloth.

The water is the “whey” and the white fragments that stay on the top is called the “Paneer”, “Chhena” and “Cottage Cheese”.

Tie the paneer in the muslin cloth and hang it, for more of the whey to drip out.

After 5 minutes, remove the paneer in a big platter.

Add the powdered sugar, cardamom and saffron and mix it well.

Knead it well with your hand or with the back of a small bowl.
Do not overknead as it will become too greasy.
