POTATOES WITH CAPE GOOSEBERRY

Ingredients
1/2 kg - Potatoes (boil, dice)
1/2 cup - Cape Gooseberries (Pitari, Rasbhari) (halves)
1pc - Spring onion (finely chopped)
2 Tbsp - Dill leaves
2 Tbsp – Jalapeno pepper

Method
Place potatoes in a mixing bowl.
Add the spring onions, dill leaves, jalapeno pepper and the sweet mustard vinaigrette.
Mix and transfer to a serving bowl.
Add the gooseberries and serve.

A sweet mustard vinaigrette
1 tsp - Dijon Mustard
2 Tbsp - Apple cider vinegar
1 tsp – Sugar
1 Tbsp - Olive oil
1/4 tsp – Chilli flakes

Method
A sweet mustard vinaigrette made by mixing dijon mustard, apple cider vinegar, sugar and chilli flakes.
Whisk in the olive oil.
