1 Banana makes upto 100 gms of chips
3 pcs - Green unripe raw bananas (found with the South Indian vegetable vendor)
For deep fry - Oil
Mix 20 ml salt to 50 ml water and keep aside for later use.
Some salt will settle down as the water gets saturated.
Using a knife make straight deep lines in the banana skin till you reach the banana flesh.
Peel the skin off, it takes a little effort.
Cut thin round slices of the peeled banana, either with a mandolin (grater),peeler or a knife.
Meanwhile heat the oil for deep frying.
When the oil is very hot, put one slice in it, it should come up immediately.
Now you can put the slices of one banana in it and fry.
Using a slotted spoon gently overturn it a few times.
Reduce the heat.
Now, carefully put approximately 2 tsp of the salted water in the oil
The oil may crackle for few seconds
Turn over the chips once or twice more,on medium flame.
When it is a crispy texture, remove the fresh yellow coloured chips on a paper napkin.
Repeat this process with the rest of the bananas.
Cool and store.
It stays fresh in an airtight container for a month.
